Grinder Salad Sub Sandwich

This is my take on the viral grinder salad sandwich, and it’s one I keep coming back to when I want something quick, fresh, and packed with flavor. Loaded with crisp lettuce, tangy dressing, and layers of savory meats and cheese, it brings that perfect balance of crunch and richness in every bite. It’s easy to throw together, endlessly customizable, and makes a satisfying lunch or light dinner when you’re craving something bold without a lot of effort.

Ingredients:

Sandwich:

  • 4 Sub Rolls
  • 1 sliced Tomato
  • 1 thinly sliced head of Iceberg Lettuce
  • 1/2 diced Red Onion
  • 1/3 cup chopped Banana Peppers
  • 8-12 slices of Provolone Cheese
  • 16 large Pepperoni slices
  • 16 slices of Salami
  • 8 slices of your favorite Ham

Dressing:

  • 1/2 cup of Mayonnaise
  • 1 Tbsp. Red Wine Vinegar
  • 1 tsp. Garlic Powder
  • 1 tsp. Oregano
  • 1/2 tsp. Salt
  • Ground Pepper to taste

Instructions:

  • Make the dressing:
    • Add the mayonnaise, red wine vinegar, garlic powder, oregano, salt, and pepper to a large mixing bowl and stir well to combine.
    • Add the diced red onion, chopped banana peppers, and lettuce and stir well to coat all veggies.
    • Set aside.
  • Assemble the Sandwich:
    • Preheat the oven to the broil setting.
    • Slice each sub roll lengthwise down the center.
    • Layer the provolone, pepperoni, ham, and salami on each sub roll.
    • Place open sandwiches in the oven for 3-4 minutes.
    • Add tomato slices.
    • Top with the salad mixture.
    • Enjoy!
