Meat and vegetables are my favorites, and most evenings in my home revolve around combining them into delicious, hearty meals. I would recommend this beef and broccoli recipe for a filling meal.
Instructions:
2 lbs. Chuck Roast (cup into cubes)
1 cup Beef Broth
1/2 cup Soy Sauce
1/4 cup Brown Sugar
1 Tbsp. Sesame Oil
4 Garlic Cloves (minced or pressed)
1 Medium Onion (sliced)
1 head of broccoli (cleaned and cut into bite-sized florets)
Slurry:
2 Tbsp. Cornstarch
4 Tbsp. Cold Water
Instructions:
- Add the chuck roast and sliced onions to a crockpot.
- In a mixing bowl add beef broth, soy sauce, brown sugar, sesame oil, and minced garlic cloves and whisk together.
- Pour the contents of the mixing bowl over the chuck roast and onions in the crockpot.
- Cook covered in the crockpot on medium for 2 1/2 hours.
- After 2 1/2 hours check for tenderness. If the meat has reached your desired doneness continue with instructions below. If not, cook for another hour or so.
- Make a slurry by whisking together the cold water and cornstarch in a small bowl.
- Pour into the crockpot with the beef and onions. Stir in well to mix.
- Add 1 head of broccoli cleaned and cut into bite-sized florets.
- Cook covered for another 30 minutes in the crock pot.
- Stir in the broccoli to mix.
- Serve over cooked rice.
