Brocolli Cheese Soup

Broccoli cheese soup is a quick and easy meal that can be made with simple ingredients you likely already have on hand. This version is rich and creamy with a deliciously cheesy flavor, yet it’s perfectly balanced for even the pickiest eaters. Comforting, satisfying, and effortless to prepare, it’s a go-to recipe for a cozy meal any time!

Ingredients:

4 Tbsp. Butter

3 Tbsp. Unbleached Flour

4 cups Chicken Stock

1 Large Onion (diced)

2 Large Carrots (grated or sliced)

1 1/2 lbs. Brocolli (chopped)

1 tsp. Celtic Salt

1/4 tsp. freshly cracked Black Pepper

1/2 cup Whole Milk

1/2 cup Heavy Cream

1 1/2 cup Shredded Cheddar Cheese

1/4 cup Shredded Parmesan Cheese

Instructions:

  • Clean and prepare veggies as suggested
  • In a large saucepan, melt butter over medium-high heat. Add onion, carrots, salt & pepper, and saute until the onions are transparent (approximately 6 minutes)
  • Add flour and stir well cooking for 1 minute until blonde in color.
  • Add broth slowly while stirring. Bring to a boil.
  • Once boiling, reduce to a simmer and add broccoli. Simmer uncovered for 15 minutes or until broccoli is tender.
  • Pour in the milk, heavy cream, cheddar cheese, and parmesan cheese and stir to combine.
  • Simmer for 3-5 minutes or until cheese is melted.
  • Serve with a garnish of cheese or croutons on top.
