Ingredients:
8 oz. Cremini Mushrooms or your favorite flavorful mushroom(cleaned, and sliced)
1 lb. Fresh Green Beans ( cleaned and trimmed)
1 1/2 Tbsp. Avacado Oil (or Extra Virgin Olive Oil)
1 Tbsp. Balsamic Vinegar
Salt & Pepper to taste
2 Tbsp. grated Parmesan Cheese
Instructions:
- Wash all veggies thoroughly and prepare as suggested above
- Preheat oven to 450 degrees Fahrenheit
- Add beans and mushrooms to a large mixing bowl
- In a smaller bowl, add olive oil and balsamic vinegar and stir together
- Pour the mixture over the beans and mushrooms and stir to coat all with the mixture
- Arrange on a large baking sheet in one even layer
- Roast for 20-30 minutes in the preheated 450-degree oven
- Start checking for preferred doneness at 20 minutes
- Cook until all liquid appears evaporated
- Season with salt and pepper to taste
- Toss in parmesan cheese
- Serve hot
