Zucchini Bread

Zucchini always seems to be in abundance when gardening and this zucchini bread recipe is the perfect way to put it to good use. It’s moist, flavorful, and a delicious way to enjoy your harvest!

Ingredients:

3 large Eggs

1 cup Apple Sauce

2 cups Cane Sugar

1 tsp. Vanilla Extract

2 cups zucchini (grated and drained)

3 cups Unbleached flour

1 tsp. Celtic Salt

1 tsp. Baking Soda

1/2 tsp. Baking Powder

2 tsp. Ceylon Cinnamon

Instructions:

  • Preheat oven to 325 degrees Fahrenheit.
  • Grease two bread pans with butter and dust lightly with flour.
  • In a large mixing bowl, beat 3 eggs.
  • Add apple sauce, sugar, vanilla extract, and zucchini to the beaten eggs.
  • In a second large mixing bowl, add flour, salt, baking soda, baking powder, and cinnamon. Stir until well blended.
  • Add the dry ingredients to the wet ingredients. Mix until well blended.
  • Pour even amounts of batter into each prepared bread pan.
  • Bake in the preheated 325-degree oven for 75 to 90 minutes.
  • Start checking doneness at 75 minutes.
  • Bread is done when an inserted wooden toothpick comes out clean.
